Asparagus is a wonder-food! It is a great source of Vitamin K which is the vitamin that regulates blood clotting. However, if you are on a blood-thinning medication, it is advisable to check with your health-care provider to make sure asparagus is on your approved list.

In addition, asparagus is a great natural diuretic, nourishes the digestive tract, is a good source of fiber plus is considered an anti-inflammatory food with the extra bonus of being an antioxidant. All in all, this food should be showing up on your table a few times a month!

This dish comes together rather quickly…the risotto needs to be slow-cooked so try not to rush it!

ENJOY!

Not everyone loves eggplant, also known as aubergine, but this version is a crowd favorite.

The smoky taste of the grilled eggplant along with the lemony pasta makes this dish deliciously light and satisfying.

The skin on the grilled eggplant should start to shrivel and the shape soften. Be sure to test for doneness by poking with a fork or knife.

When sauteing mushrooms, remember to cook over a medium-high heat, turning often, and do not salt! if you don’t like mushrooms…this dish works great without them.

NOTE: If you don’t like mushrooms…this dish works great without them.

Those of you that consistently follow my blog must think I have a scone addition. Truth is, I love them! I continually try to experiment with new ingredients. I f you try one of my scone recipes, please let it be this one.

This are fluffier than traditional scones plus have more of a cake texture. They are not at all dry and super easy to prepare.

Most scone recipes recommend that you form into a circle and then cut into pie-like pieces. But what the heck, just drop them on a baking sheet and you are good to go!

ENJOY!
