Cauliflower! An absolutely amazing vegetable that is versatile as your imagination. This wonderful nightshade veggie (is great for gut health and provides antioxidant and anti-inflammatory phytonutrients.)  You can grill it, bake it, mash it, fry it, and boil it! Additionally, cauliflower is a great source of cell-supporting folate, vitamins C & K. It is fat-free and cholesterol free and also low in sodium. What’s not to love about cauliflower?

This recipe comes together relatively easily and takes about 50 minutes of total cooking time plus about 10 extra minutes for prep. You can definitely eat this all by itself as a main dish or as a side.

Herbed Cauliflower

Ingredients

  • 1 whole Cauliflower leaves removed
  • 4 Tbl. Earth Balance
  • 4 Tbl. Olive Oil
  • 1 tsp. Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Cumin
  • 1 tsp. Smoked Paprika
  • 1/3 cup Chopped, fresh herbs, basil, dill, parsley, rosemary (or any combination you prefer)
  • 1/2 fresh Lemon juiced

Directions

  1. Prepare herb mixture in a medium bowl. Whisk together melted Earth Balance, olive oil, seasonings, herbs and lemon juice. Set aside.
  2. Remove leaves from cauliflower and place, stem side up, in a large pot of boiling, salted water and cook for 10 minutes.
  3. Drain cauliflower and wipe down to remove access water. Place on a lined baking sheet and, beginning on stem side, brush with the herb mixture. Turn right side up and continue brushing remaining herb mixture to coat entire cauliflower.
  4. Bake for 35-40 minutes in a 400-degree oven, or until when a knife is inserted the inside of the cauliflower is tender. Cut into slices or pieces and arrange on a dish with tahini sauce.

Tahini Sauce

Ingredients

  • 1/2 fresh Lemon juiced
  • 5 Tbl. Tahini
  • 1/3 cup OliveOil
  • 5 cloves Garlic minced
  • 1 tsp. Salt more or less to taste

Directions

  1. Whisk together all ingredients until smooth. If mixture is too thick, add water a teaspoon at a time until desired consistency is reached.

  1. This is a blue ribbon winner hands down. I enjoyed it recently as a main dish at a dinner party on one occasion and cut into small servings as an appetizer with wine at another. The topping just explodes deliciousness in your mouth. A must for any vegan’s recipe box.
