This looks like a super hard and involved dish to prepare but trust me, it is simple…especially if you use a store-bought pie crust.

You can adjust the veggies to taste but I would recommend trying it with the ingredients listed in the recipe, for the first time, and then feel free to adjust it to your taste when you make it again.

The key is to make sure you add HEAPING tablespoons of flour, otherwise, the quiche will be too runny. A note of advice, let the quiche sit on the counter for about 10-15 minutes before slicing it. Leftovers can stay in the refrigerator for up to 5 days.

Ingredients

  • 2 Tbl. olive oil
  • 2 Tbl. Earth Balance
  • 1/2 medium onion diced
  • 1/2 large green pepper diced
  • 5 cloves garlic diced
  • 12 large baby bella mushrooms chopped
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 4 heaping Tablespoons flour
  • 1/2 cup non-dairy milk
  • 1/2 cup Follow Your Heart Parmesan Shreds
  • 1/2 cup Violife Shreds, or other vegan shredded cheese
  • 1/2 cup JustEgg Vegan Egg
  • 2 large tomatoes sliced into rounds

Directions

  1. Melt olive oil and Earth Balance in a large saute pan. Add onion, green pepper, and garlic. Saute for about 3 minutes or until slightly translucent. Add Mushrooms and continue to cook a few minutes more, until the mushrooms have released their juices.
  2. Sprinkle with garlic powder, onion powder, salt, and pepper to incorporate.
  3. Stir in flour, until combined, and then gradually add the milk. (Add a tablespoon more, at a time, if the mixture seems too thick. It should have the consistency of a thick gravy or creamed soup.)
  4. Once non-dairy milk in mixed in, remove from the heat and add the cheeses and JustEgg, stirring until combined.
  5. Pour into the prepared crust and top with fresh tomato slices. Bake at 375 degrees for 40 minutes or until the center is set.

Easy Peasy Crust

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 tsp. salt
  • 1/2 cup vegetable oil
  • 1/4 cup hot (boiling) water

Directions

  1. In a medium bowl place flour and salt. Add oil and boiling water. Stir until combined.
  2. Place a large sheet of saran wrap or parchment paper on the counter and top it with the dough. Cover the dough with another sheet of saran wrap or parchment paper. Using a rolling pin, roll into a round. Remove saran wrap or parchment and place the unbaked crust round in a deep pie dish, trimming and crimping edges.
