Before becoming vegan, my husband loved eating fried shrimp, and especially enjoyed coconut shrimp. I went through a few renditions of trying to perfect an air-fried version using tofu and think this simple approach is one worth sharing.

The nutritional profile of this dish is amazing. Coconut is high in fiber and low in carbs and is notable for helping control blood sugar levels and containing antioxidants that help combat the destruction of cells.

If you are like me and prefer savory to sweet, use UNSWEETENED Coconut and serve with a tangy sweet sauce such as a pineapple pepper or Sweet Chili Sauce. To keep it simple, top the air-fried tofu with some freshly squeezed lime juice and omit the sauce altogether.

Ingredients

  • 1 brick Extra Firm Tofu, drained, patted dry, and cut into 24 cubes
  • 1 cup flour
  • 1 tsp. salt more or less to taste
  • 1/2 tsp. black pepper more or less to taste
  • 1/3 cup Just Egg
  • 1/3 cup non-dairy milk
  • 1 1/2 cups panko crumbs
  • 3/4 cup Unsweetened Coconut Flakes

Directions

  1. Drain, Pat dry and cut tofu into 24 equal-sized cubes. Set aside on a plate.
  2. Using three separate bowls, mix flour, salt, and pepper into the first bowl.
  3. In the second bowl stir together Just Egg and non-dairy milk.
  4. Mix together Panko Crumbs and Coconut Flakes in the third bowl.
  5. Take a tofu cube and coat in the flour mixture, then the Just Egg/non-dairy milk mixture and finally roll in the panko and coconut mixture. Repeat with all 24 pieces.
  6. Once all 24 pieces are ready, air fry, in two batches of 12, at 400 degrees for 10 minutes.
