Spaghetti Squash with Herbed Cauliflower

There are literally hundreds of spaghetti squash recipes but mostly every single one of them includes tomatoes and/or red sauce. I wanted to do something original, delicious, and creamy. This herb-infused creation takes a few fairly bland vegetables – spaghetti squash, cauliflower, and mushrooms – and elevates them into a main or side dish sensation.

As always, feel free to use whatever herbs you have on hand, or simply follow the recipe exactly. I will note, however, that it may be difficult to find German Thyme but substituting more lemon thyme or parsley will also work great.

Spaghetti Squash

Ingredients

  • 1 large spaghetti squash, cut in half and baked
  • 1 large cauliflower broken into small florets
  • 3 Tbl. olive oil or more to coat
  • 1 Tbl. german thyme, diced
  • 1 Tbl. lemon thyme, diced
  • 1 Tbl. Parsley, diced
  • 1 Tbl. Oregano diced
  • 1/2 cup Follow Your Heart Vegan Parmesan Shreds

Directions

  1. Cut spaghetti squash in half, lengthwise. Remove seeds and place flesh side down on a baking sheet with salted water, just below rim. Bake at 350 degrees for 35 minutes or when outside of squash is poked with a fork and penetrates skin.

Sauteed Mushrooms

Ingredients

  • 4 Tbl. Earth Balance Margarine Stick
  • 1/2 cup scallions diced
  • 12 oz. mushrooms diced into small pieces
  • 3/4 tsp. salt
  • 1 tsp. garlic powder

Directions

  1. In a saute pan, melt Earth Balance and add diced scallions. Cook for 2 minutes and then add diced mushrooms and cook an additional 5 minutes. Remove from heat and stir in salt and garlic powder.

  1. Using a fork, remove insides of cooked spaghetti squash strands. Place in a large bowl. Add cooked cauliflower and sauteed mushrooms. Stir in Follow Your Heart Vegan Parmesan Shreds.
