Those of you that consistently follow my blog must think I have a scone addition. Truth is, I love them! I continually try to experiment with new ingredients. I f you try one of my scone recipes, please let it be this one.

This are fluffier than traditional scones plus have more of a cake texture. They are not at all dry and super easy to prepare.

Most scone recipes recommend that you form into a circle and then cut into pie-like pieces. But what the heck, just drop them on a baking sheet and you are good to go!

  • 1/2 cup applesauce
  • 1 tsp. baking powder
  • 4 cups flour
  • 2/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 sticks Earth Balance Cold and cut into small pieces
  • 1 Tbl. vanilla extract
  • 1 cup Foragers Vanilla Yogurt, or another vegan brand
  • 2 cups Blueberries Or fresh berry of choice

  1. Combine applesauce and baking powder. Set aside to "rise" for eggs
  2. In a large bowl combine dry ingredients.
  3. Using hands, mix in Cold pieces of Earth Balance Margarine and continue to mix until it becomes a crumbly mixture.
  4. Mix together Vegan Vanilla Yogurt (Foragers is great) and then add, along with Applesauce eggs mixture to dry ingredients.
  5. Coat hands with flour and mix all ingredients together until it forms a soft dough. NOTE: If dough seems to sticky, add a little more flour.
  6. Fold in berries.
  7. Line a baking sheet with parchment paper
  8. Form dough into round circle pieces (about 3" each) and place on prepared sheet.
  9. Top each piece with a small amount of sugar. (Optional)
  10. Bake in 350 degree oven for 15 minutes or until golden brown.
