YES! I think I finally nailed this recipe. I tasted a kale salad with peanut sauce somewhere in LA several years ago and have been trying to duplicate it. Did I succeed? Nope, but this is even better!




  • 2 Tbl. olive oil
  • 2 Tbl. crushed garlic
  • 1 can reduced fat coconut milk
  • 3/4 cup peanut butter Creamy or Smooth
  • 2 Tbl. maple syrup
  • 1/4 tsp. sriracha
  • 1 Tbl. Rice Wine Vinegar
  • 1/2 tsp. salt or more to taste


  1. Heat Olive Oil and Stir in Chopped Garlic. Cook, over low heat, a few minutes.
  2. Whisk in remaining ingredients and heat until smooth. (About 2 minutes)
  3. Let sit for 10 minutes.



  • 1 medium head of Kale, finely chopped
  • 1 1/2 cups arugula
  • 1/2 Large English Cucumber, chopped
  • 1/2 cup cherry tomatoes
  • 3/4 cup garbanzo beans


  1. Chop veggies and put in large bowl.
  2. Toss with 3/4 cup of dressing.
  3. Refrigerate remaining dressing and use for up to 1 week.
