July 4th is almost here!

If you have holiday plans that include a picnic, this potato salad is a perfect side dish. Whether you are hosting, invited as a guest or having your own private soiree, this is a fantastic salad!

I like to use a combination of baby red and yellow potatoes and, if you want to be in the holiday moment, you can also toss in some blue potatoes too!

The addition of the nutritional yeast gives the salad the taste of eggs without using actual eggs!



  • 3 lbs. potatoes baby size


  1. Cut potatoes into fourths and boil in salted water until fork-tender. (About 15 minutes)

Seasoning Sauce


  • 1/3 cup sugar
  • 2 Tbl. nutritional yeast
  • 1/2 cup apple cider vinegar


  1. In a measuring cup, whisk together ingredients.
  2. Strain cooked potatoes in a strainer and, while still hot, top with seasoning sauce.
  3. Let sit until cool.



  • 1 medium red onion finely diced
  • 1/2 cup dill pickle relish
  • 1 cup Just Mayo or other vegan mayonaise


  1. In a large bowl combine, seasoned, drained potatoes, red onion, pickle relish. Stir in mayonaise and chill.
