My heritage is half French. In addition to croissants (which I am desperately trying to come up with a veganized version) and wine, I love Split Pea Soup. I fondly remember my dad putting on his best puppy-dog-eye face and asked my mom to please make him some Split Pea Soup and Johnny Cake (otherwise known as cornbread).

Of course, my mom would use a ham bone or bacon, which in my recipe I opt for some Hickory Flavored Liquid Smoke.

Simply Peas

Ingredients

  • 16 oz. split peas rinsed and sorted

Directions

  1. In a strainer, rinse and sort split peas. Set aside

Scrumptious Soup

Ingredients

  • 2 Tbl. olive oil
  • 1 large onion chopped
  • 2 large carrots diced
  • 2 large potatoes diced
  • 1 tsp. salt
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 16 oz. water hot
  • 2 Tbl. Low Sodium Better Than Bullion Vegetable Flavor
  • 1/4 tsp. Wrights Liquid Smoke hickory flavor

Directions

  1. Heat Oil in a Soup Pot.
  2. Add Chopped Onion and cook until translucent, about 2 to 3 minutes over medium-high heat.
  3. Add carrots and potatoes, salt and seasonings. Cook for an additional 5 minutes.
  4. Mix Low Sodium Better than Bullion into hot water and mix until blended. Add to soup pot along with rinsed split peas. Cook until boiling.
  5. Add Liquid Smoke. Cover and simmer on low heat for 3 to 3.5 hours.
  6. Optional: Top with smashed avocado and tomato.
