Let me forewarn you, because these are bite-sized you may end up popping more than 2 or 3, which is the recommended serving size.

I am really proud of how these tiny delectables turned out. The scones themselves are more of a biscuit-like pastry but with the combination of the maple-syrup infused topping the flavors all meld together to create magic!

The consistency of the glaze should be like maple syrup. Try adding more or less powdered sugar, if needed.

Spiced Pumpkin Scones

Ingredients

  • 2 cups flour
  • 1/3 cup brown sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1 Tbl. corn starch
  • 1/2 cup Earth Balance Margarine
  • 1/2 cup organic pumpkin
  • 1 tsp vanilla
  • 3 to 5 Tbl. Unsweetened almond milk
  • 1 Tbl. molasses

Directions

  1. Mix together dry ingredients in large bowl.
  2. While mixer is still running, add all wet ingredients. Earth Balance, Pumpkin, Vanilla, Almond Milk and Molasses. Batter should hold together but not be too sticky.
  3. Place mixture on floured surface and roll into large disc, about 1/2" thick.
  4. Using a cookie cutter or rim of small glass, cut into circles and place on greased cookie sheet.
  5. Bake in 400 degree oven for 10 to 12 minutes or until slightly brown on the bottoms.

Maple Glaze

Ingredients

  • 2/3 cup powdered sugar or more to reach desired consistency
  • 1 tsp. vanilla extract
  • 2 Tbl. maple syrup
  • 1 Tbl. Unsweetened almond milk
  • 1/2 tsp. cinnamon Add to glaze or sprinkle on top

Directions

  1. In a medium size bowl, mix together powdered sugar with Vanilla Extract, Maple Syrup and Almond Milk, stirring until smooth.
  2. While scones are slightly warm, top with maple glaze, and if desired sprinkle with cinnamon, crushed nuts or mini vegan chocolate chips.
  3. Makes 30-36 mini scones
