I always loved my mom’s baked beans and she used a brand of canned beans that can only be purchased in the Northeastern United States. I have literally tried, for years, to duplicate the taste of those beans, along with my mom’s special additions.
Today, before a family picnic I experimented and came up with this dish. It was an immediate hit and a recipe I would like to share with you.

I have made many, many batches of Cream of Broccoli Soup through the years but always used regular broccoli.
I had a some broccoli rabe in my refrigerator and decided to experiment with it. Since broccoli rabe has a less bitter and milder taste than regular broccoli, it was worth a bit of experimentation.
WOW. The soup was so unbelievably creamy and mild. I suggest you give this recipe a try soon.
For dinner you can serve alongside salad for a complete meal. Trust me, this soup is hardy so you don’t need any bread.

The yummy summer tomato season is coming to a close for most of the country so try and enjoy every plump sensation in the next few weeks!
This salad is hearty enough to make a complete meal but can also accompany a soup. No need to serve with a roll, the bread is already in the salad.
I like to let the tomato/avocado mixture sit at room temperature for about 15 minutes and then toss in the croutons just before serving.
