Summer brings long days, beautiful sunshine, replenishing rain, and amazingly delicious vegetables. I used dried parsley and oregano but you can substitute fresh if you have some on hand.
This dish really is great as a main with a side salad for a delicious and fulfilling dinner or, if you are super hungry, you can always mix it with pasta, rice, or as a bruschetta.
The Parmesan shreds are optional, but I highly recommend using them!
This is my husband’s absolute favorite dish! If it were up to him, we would have it every other night.
It is super simple to make and is great as a main or side dish. Zucchini & Crooked Neck (Summer) Squash vary in size so the best way to tell if you have enough, or too much, is to make sure each layer completely lines the casserole dish.
My husband was getting ready to go out of town and I needed to whip up a quick dinner. I had some sliced mushrooms in the refrigerator and decided to make them the star attraction. I love just about anything Mexican and this dish is not too spicy. (Although, feel free to add some kick if that is your style!)
You can experiment with adding more ingredients, like black beans, corn or even Soyrizo. The possibilities are as big as your imagination.
