This recipe is ready in a flash! If it is still steamy-hot where you live and you don’t want to fire up the oven you can cook this calzone on the grill. Simply spray a piece of aluminum foil, making sure seam-side is up. Or it also cooks great on a made-for-grilling pizza stone.

Mexican Food. Si Si Si!

I did not grow up having Mexican food, there wasn’t much of it to be found decades ago in a small Upstate NY town. But, since I dipped my first tortilla chip into a bowl of fresh guacamole, I was hooked.

I continue to try and create Mexican classics,  veganized. This one happens to be one of my husband’s favorite dishes and I hope that you, too,….ENJOY!

This recipe came to me when I was looking at ingredients in my refrigerator that needed to be used up before spoiling.

Any kind of rice will work but I think the nuttiness of the pilaf adds a little something extra to this dish. Also, if you are not a fan of asparagus, you can substitute any grilled veggie of your choice.
