This recipe is ready in a flash! If it is still steamy-hot where you live and you don’t want to fire up the oven you can cook this calzone on the grill. Simply spray a piece of aluminum foil, making sure seam-side is up. Or it also cooks great on a made-for-grilling pizza stone.

Ingredients

  • 1 package Trader Joes Garlic Herb Pizza Dough
  • 3/4 cup tomato sauce
  • 1/2 package Kite Hill Almond Ricotta
  • 1/4 cup pepperoncini sliced
  • 1/2 cup roasted red pepper chopped
  • 1 cup fresh spinach chopped
  • 8 ounces mushrooms sliced
  • 1/2 teaspoon dried oregano

Directions

  1. Remove pizza dough from package and set out at room temperature for 10 minutes.
  2. Saute mushrooms.
  3. Add pepperoni, roasted red pepper, spinach, and oregano to saute and cook until flavors combine.
  4. Roll out dough into a large circle after the 10 minutes is up.
  5. Coat the dough evenly with tomato sauce leaving 3 inches of uncoated space around the edge.
  6. Spread sauteed vegetables evenly over sauce.
  7. Fold dough over in half, creating a half circle, and pinch open edges creating a seal.
  8. Brush both sides with olive oil and bake at 375°F for 25 minutes.
