Jack Fruit Tacos with Avocado & Banana

I am not really sure what gave me the idea to combine bananas and avocados and I am equally as certain that not everyone will be a fan of this combination, however it is definitely worth a try. For those that may be a bit timid, I would recommend starting with half of a banana and then adding more if you like the taste.

Tex Mex Jack Fruit


  • 1 Package Tex Mex Jack Fruit, shredded
  • 2 Tbl. fresh cilantro Chopped
  • 1/2 tsp. salt


  1. Shred Tex Mex Jack Fruit and mix in a medium bowl with cilantro and salt.
  2. Cover and heat in microwave oven :90 seconds to 2:00 minutes, or until warm.

Avocado-Banana Mash


  • 1 Medium banana mashed
  • 1 large avocado mashed
  • 1/2 medium lime juiced
  • 1/2 tsp pink sea salt


  1. Mash together avocado and banana.
  2. Stir in juice of lime and salt.

Corn Tortillas & Tempting Toppings


  • 8 small corn tortillas, heated
  • 1 cup Parmela Creamery Aged Cheddar
  • 4 Tbl. vegan ranch dressing


  1. Heat corn tortillas.
  2. Top with equal amounts of Jack Fruit mixture.
  3. Add a layer of 1/8 cup of Parmela Creamery Cheese per tortilla, Avocado-Banana Filling and top with Vegan Ranch (or, if you prefer, salsa).
