I heart cauliflower. It is one of the most versatile foods on the planet. It can be boiled, baked, fried, sliced, diced, riced! I hope you enjoy this tasty and ridiculously satisfying dish.

Ingredients

  • 2 Tbl olive oil
  • 1 tsp garlic crushed
  • 1/2 cup ketcup
  • 2 Tbl maple syrup
  • 1 Tbl low sodium tamari
  • 1 tsp dijon mustard
  • 1 tsp sriracha
  • 1 head cauliflower
  • 1 cup cornmeal
  • 2 Tbl nutritional yeast
  • 1 package fresh spinach

Directions

  1. In a small saucepan heat oil, add garlic, and saute 2 min.
  2. Add ketchup, maple syrup, tamari, dijon mustard and sriracha. Cook for 3 min.
  3. Break cauliflower into large pieces and put in large ziplock bag. Pour the BBQ sauce and toss well. Remove from bag.
  4. Cook on grill for 30 to 40 min. or in oven at 375 for 25 to 30 minutes, until fork-tender
  5. Remove from grill or oven and toss in bowl of cornmeal and nutritional yeast.
  6. Serve on fresh spinach leaves with vegan ranch dressing.
