This recipe came to me when I was looking at ingredients in my refrigerator that needed to be used up before spoiling.

Any kind of rice will work but I think the nuttiness of the pilaf adds a little something extra to this dish. Also, if you are not a fan of asparagus, you can substitute any grilled veggie of your choice.

Fruity Salsa

Ingredients

  • 12 ounces mango chopped
  • 2 peaches chopped
  • 3/4 cup pineapple chopped
  • 1/2 cup fresh cilantro chopped
  • 1 tablespoon jalapeno chopped
  • 1/2 cup red onion chopped
  • 1 tomato chopped
  • 1 lime juiced
  • 1 teaspoon salt
  • 1 tablespoon agave nectar

Directions

  1. Prepare all chopped ingredients.
  2. Add chopped ingredients to a bowl and mix with lime, salt, and agave.

Grilled Yums

Ingredients

  • 1 bunch asparagus
  • 1 package firm tofu

Rice Pilaf

Ingredients

  • 1 cup rice pilaf

Directions

  1. Prepare rice pilaf according to package instructions, substituting vegan bullion for added flavor. Toss in chopped, cooked mushrooms and tofu squares.

Grilled Asparagus, Tofu & Mushrooms

Ingredients

Directions

  1. Cut mushrooms in half. Toss with oil and grill or saute. After cooking, chop into small pieces and set aside.
  2. Spray or toss asparagus with oil (or vegetable broth) and grill or saute.
  3. Cut drained tofu into 1/2" squares and saute in pan coated with olive oil cooking spray. Cook over medium heat until browned on all sides.
