This recipe is loosely based on my sister-in-laws mom’s recipe for Hummingbird cake.

I couldn’t remember the exact ingredients in the original (although I am sure eggs and butter were on the list) so I just experimented and came up with this yummy, vegan delights.

I hope you ENJOY as much as we do!


  • 10 Tbl Earth Balance Margarine melted
  • 1 1/2 cup sugar
  • 2 tsp vanilla extract
  • 4 whole banana mashed
  • 1/2 cup carrot shredded
  • 1/3 cup pineapple crushed
  • 1/2 cup walnuts chopped
  • 1/2 cup applesauce
  • 3 tsp baking powder
  • 3 cup white flour
  • 2 tsp baking soda
  • 1 tsp nutmeg
  • 1 tsp salt


Hummingbird Cake Muffin



  1. In a small bowl mix together applesauce and baking powder, set aside for 3 min, then mix with wet ingredients.
  2. In another bowl stir together dry ingredients and then stir into wet ingredients. Don't over mix.
  3. Fill paper lined muffin pans to the top with muffin mix and top each with crumble topping.
  4. Bake at 375°For 20 min.
  5. Let cool in pans for 10 min.

Crumble Topping



  1. mix together 2 Tbl Earth Balance, 4 Tbl brown sugar and 3/4 cup oats.
