Not quite sure where I came up with this particular recipe other than I had some green beans in the refrigerator that I needed to use up!

The Cauliflower Mash is so yummy with less starch and calories than potatoes.

If you do not have any gin on hand, you can use vodka. Remember to cook at least 10 minutes to help eliminate the alcohol content.

I have made Potato Leek Soup so many times! The other night I decided to try something different. I needed to use up a 32-oz. bag of Organic Riced Cauliflower and also had a few leeks on hand. The more I thought about it the more I liked the idea. I love using cauliflower in place of mashed potatoes…so why not?!

This soup only uses a few ingredients and comes together super-quick. You can omit the Vegan Mozzarella, use a little more/less, or substitute another variety…you really can’t lose.

With the fall months just a few weeks away, I would recommend you give this yummy soup a try!

My ancestry is half Italian so anything with the word “Roman” in it automatically gets my attention.

The jury is still out on whether or not to call this funky looking veggie broccoli or cauliflower. I think it tends to be more like cauliflower but is a little more tender and sweeter.

Whatever you choose to call it, romanesco is a wonderful vegetable with a lot to offer. If you happen to find some at your local farmers market or grocery, romanesco is an excellent addition to vegan recipes for pastas, salads, and adding a dimension to just about any dish.

Nutritionally speaking, this veggie contains high levels of carotenoids, iron, Vitamin C and folates.
