Not quite sure where I came up with this particular recipe other than I had some green beans in the refrigerator that I needed to use up!

The Cauliflower Mash is so yummy with less starch and calories than potatoes.

If you do not have any gin on hand, you can use vodka. Remember to cook at least 10 minutes to help eliminate the alcohol content.

Cauliflower Mash

Ingredients

  • 1 large cauliflower broken into floweretts
  • 2 Tbl. garlic crushed
  • 1/2 cup Tofutti Sour Cream, or other vegan variety
  • 3 tbl. Earth Balance Margarine

Directions

  1. Break up a head of cauliflower into small flowerets. Place in a saucepan with vegetable broth or just plain water and crushed garlic. Boil for at least 25 minutes or until fork-tender.
  2. Drain and add sour cream and Earth Balance. Whip with a hand mixer or immersion blender.

Green Beans

Ingredients

  • 1 lbs. green beans cleaned and trimmed
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 3/4 tsp. cumin
  • 2 tbl. olive oil

Directions

  1. Place 2 lbs. of fresh, trimmed green beans on a baking sheet.
  2. Sprinkle with salt, garlic powder, and cumin. Toss with olive oil and bake in 350-degree oven for 25 minutes or until fork-tender

Raspberry Gin Sauce

Ingredients

Directions

  1. In a small saucepan, combine 2/3 cup raspberry preserves, 1/4 cup gin or vodka and 1 Tbl. Tamari. Cook over low heat for 15 minutes.
