My dear friend gifted me with some amazing zucchini this past weekend. I started thinking of some culinary opportunities. The original options of stir-fry, zucchini bread and ratatouille came to mind but I wanted something extraordinary.

A casserole, perhaps, but something with a Mexican flavor. This came together in a matter of minutes and I hope you enjoy it as much as we did.

You can add your own flair by topping it with fresh avocado slices, cilantro or simply a dash of lime juice.

Fried Zucchini

Ingredients

  • 4 Tbl. Flaxseed Meal, mixed with 1 1/2 cups warm water
  • 1 large zucchini, sliced into rounds
  • 2 cups Bread Crumbs, vegan
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 cup Follow Your Heart Vegan Parmesan,

Simply Soyrizo

  • 12 oz. El Burrito Soyrizo, or any other vegan brand. This one is the mildest.

  • 14.5 oz. black beans rinsed and drained
  • 14.5 oz. Chopped Tomatoes, canned, slightly drained.
  • 1/4 cup Vegan Mozzarella Cheese, shreds
  • 1/4 cup Vegan Cheddar Cheese, shreds

  1. Mix flaxseed meal and water in a medium bowl and let sit for 5 to 10 minutes.
  2. In a separate bowl, combine breadcrumbs, parmesan, and spices.
  3. Slice zucchini and dip first in Flax Eggs and nest into breadcrumb mixture.
  4. Set on a plate and heat 4 Tbl. Olive Oil in a fry pan. Cook zucchini over medium heat for about 4 minutes, per side, making sure it does not burn.
  5. Remove fried zucchini and set on paper towels to drain.

Simply Soyrizo

  1. In a separate pan, heat Soyrizo until slightly browned. Set aside.
  2. Prepare a 9 x 14 glass baking pan with olive oil spray. Line bottom of pan with drained zucchini.
  3. Top with cooked Soyrizo, black beans and slightly drained chopped tomatoes.
  4. Sprinkle cheeses over top and cover with aluminum foil.
  5. Bake in 375 degree oven for 25 minutes.
  6. Remove aluminum foil and place under broiler for about 2 minutes or until bubbly.
  7. Let sit for a few minutes and then slice into squares.
  8. Top with optional toppings...Vegan Sour Cream, Avocado, Cilantro, etc.
