It is still summer here in Southern California but I was craving soup.

My son had some leeks and I had some potatoes. I am quite certain you have an idea as to what prompted me to create this recipe.

It really comes together fast and only uses a few ingredients.

Ingredients

  • 8 oz. Earth Balance Margarine stick
  • 3 large Leeks, cleaned and sliced into rounds
  • 10 medium potatoes peeled and sliced into rounds
  • 1 tsp. garlic crushed
  • 2 cups water
  • 2 cups non-dairy milk
  • 1 tsp. Reduced Sodium, Better Than Bouillon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt or more or less to taste
  • 1/2 tsp. pepper or more or less to taste

Directions

  1. In a large pot, melt Earth Balance.
  2. Add sliced leeks and cook for 2 minutes, over medium-high heat. Make sure to turn often so leeks don't stick to bottom of pan.
  3. Add sliced potatoes and garlic and cook, turning constantly for 2 minutes.
  4. Stir in water, non-dairy milk and bouillon and continue cooking for about 10 minutes.
  5. Using an immersion blender, mix until desired consistency.
  6. OPTIONAL: Top with diced Heirloom Tomatoes and black pepper flakes.
  7. If soup consistency is too thick, add hot water a little at a time.
