It is still summer here in Southern California but I was craving soup.

My son had some leeks and I had some potatoes. I am quite certain you have an idea as to what prompted me to create this recipe.

It really comes together fast and only uses a few ingredients.



  • 8 oz. Earth Balance Margarine stick
  • 3 large Leeks, cleaned and sliced into rounds
  • 8 medium potatoes peeled and sliced into rounds
  • 1 tsp. garlic crushed
  • 2 cups potato, shredded
  • 2 cups water
  • 2 cups non-dairy milk
  • 1 tsp. Reduced Sodium, Better Than Bouillon


  1. In a large pot, melt Earth Balance.
  2. Add sliced leeks and cook for 2 minutes, over medium-high heat. Make sure to turn often so leeks don't stick to bottom of pan.
  3. Add sliced potatoes and garlic and cook, turning constantly for 2 minutes.
  4. Stir in water, non-dairy milk and bouillon and continue cooking for about 10 minutes.
  5. Add shredded potatoes and cook for an additional 15 minutes, or until potato chunks are soft.
  6. Using an immersion blender, mix until desired consistency.
  7. OPTIONAL: Top with diced Heirloom Tomatoes and black pepper flakes.
