My husband loves artichokes but when I told him my idea for this recipe he seemed less-than-excited. That is, however, until he tasted it.

I served the pasta on top of pan-grilled romaine leaves but any green would work. It is also good hot or cold and makes a great main or side dish.

Make sure that you use artichoke hearts in water, not oil.

Veggie Pasta

Ingredients

  • 1 lb. vegetable pasta, cooked and drained

Directions

  1. Cook Pasta, Drain and return to pan.

Creamy Artichoke Dressing

Ingredients

  • 14 oz. artichoke hearts packed in WATER
  • 12 oz. Follow Your Heart Vegan Sour Cream
  • 1/2 large lemon juiced
  • 1/2 tsp. black pepper

Directions

  1. Chop drained artichoke hearts in food processor until fine but not mushy.
  2. Add Sour Cream, Lemon and Black Pepper and blend until combined.

Veggies

Ingredients

  • 1/2 large red onion chopped
  • 3 large tomatoes diced
  • 2.25 oz. black olives sliced

Directions

  1. Chop Vegetables in add to cooked pasta in pot removed from heat.

Pan-Fried Romaine Leaves

Ingredients

  • 1 tsp. olive oil
  • 1/2 tsp. garlic chopped

Directions

  1. Heat olive oil and garlic in a pan. Add leaves and cook on each side until slightly wilted, about 20 seconds per side.

Assembly

  1. Fold in Dressing and place on top of pan-grilled romaine leaves with freshly ground black pepper.
