Lemon is so fresh, just thinking of it makes me smile! Lemons are generally best throughout the summer but here in Southern California, we can enjoy them year-round.

I went a little lemon-crazy over the weekend and made these cookies, soap and body scrub!

This recipe makes about 3 dozen generous sized cookies.

VeganEgg

Ingredients

  • 3 1/2 Tbl. Follow Your Heart Vegan Egg
  • 2/3 cup water cold
  • 1 Tbl. vanilla

Directions

  1. Mix Vegan Egg in COLD water and add Vanilla.

Lemony Batter

Ingredients

  • 2 sticks Earth Balance softened
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 Tbl. Lemon Rind, Grated
  • 1/4 cup lemon juice freshly squeezed
  • 1 1/2 Tbl. Poppy Seeds
  • 3 cups flour

Directions

  1. Cream margarin, sugars. Add VeganEgg mixture, dry ingredients and lemon juice. Mix until blended
  2. Drop by tablespoons-full on prepared cookie sheet. Bake in 350 degree oven for 12 to 15 minutes.
  3. Place baked cookies on wire rack to cool slightly.

Sweet & Tart Frosting

Ingredients

  • 3 cups powdered sugar
  • 2 tsp. Lemon Rind, Grated
  • 1/4 cup lemon juice freshly squeezed
  • 1 Tbl. non-dairy milk more or less to desired consistency

Directions

  1. Mix together all ingredients in a bowl adding lemon juice and non-dairy milk a little at a time until desired consistency.
  2. Spread slightly warm cookies with frosting.
