Vegan Chicken Salad
- 5 stalks celery
- 1 package Beyond Meat Chicken Strips
- 2 tablespoons dill pickle relish
- 2 tablespoons Hampton Creek Just Mayo
- 2 tablespoons Follow Your Heart Pesto Vegenaise
- In a food processor pulse 5 stalks organic celery.
- Add Beyond Meat Chicken Strips, 2 tbl. dill pickle relish, Just Mayo, and pesto Veganaise.
- Pulse until combined.
- 2 cups fresh spinach
- 2 tomatoes sliced
- 2 avocados sliced
- Arrange 1/2 cup of spinach on serving plate.
- Slice tomatoes and avocado and add to serving plate.
- * Include crackers or bread.
