Vegan Chicken Salad


  • 5 stalks celery
  • 1 package Beyond Meat Chicken Strips
  • 2 tablespoons dill pickle relish
  • 2 tablespoons Hampton Creek Just Mayo
  • 2 tablespoons Follow Your Heart Pesto Vegenaise


  1. In a food processor pulse 5 stalks organic celery.
  2. Add Beyond Meat Chicken Strips, 2 tbl. dill pickle relish, Just Mayo, and pesto Veganaise.
  3. Pulse until combined.

Lunch Veggies


  • 2 cups fresh spinach
  • 2 tomatoes sliced
  • 2 avocados sliced


  1. Arrange 1/2 cup of spinach on serving plate.
  2. Slice tomatoes and avocado and add to serving plate.
  3. * Include crackers or bread.
