I often wonder why it took me so many years to discover sweet potatoes. In addition to being nutritionally superior to classic russet potatoes, the flavor is so much more complex.

To keep these a bit healthier, I opted to use cauliflower rice as a filling rather than traditional rice.

Stuffed Sweet Potatoes

Ingredients

  • 2 sweet potatoes
  • 2 Tbl olive oil
  • 1 shallot minced
  • 8 oz cremini mushrooms chopped
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 12 oz cauliflower riced
  • 1 Tbl Earth Balance Margarine

Directions

  1. Preheat oven to 400° F.
  2. Pierce each sweet potato several times with a fork, then place on a baking sheet sprayed with oil.
  3. Bake until tender, about 45 minutes.
  4. In a large sauce pan, heat and add shallot. Cook 2 min.
  5. Add mushrooms, salt, garlic powder, and onion powder, to the sauce pan, and cook until mushrooms are tender.
  6. Add cauliflower rice and cook until soft.
  7. Scoop insides out of sweet potato and mash with vegan margarine.
  8. Add sweet potato mixture to sauce pan and stir until blended. Turn off heat.
  9. Scoop into potato skins and top with Super Sour Cream Sauce.

Super Sour Cream

Ingredients

  • 1/2 pkg Tofutti Vegan Sour Cream
  • 1 Tbl fresh chives
  • 1 Tbl nutritional yeast

Directions

  1. In a small bowl whisk together vegan sour cream with chives and nutritional yeast.
