This recipe comes together quickly and for anyone that is a fan of a asparagus, this is a satisfying winner!

The key is to trim the asparagus so you aren’t left dealing with any rough, stringy pieces.

For people allergic to nuts, you can substitute sunflower seeds for the pine nuts.


Asparagus & Spinach Pasta


  • 1 pound pasta
  • 1 bunch asparagus
  • 1 cup fresh spinach


  1. Bring a pot of water to a boil.
  2. Add pasta and cook until noodles are "al dente".
  3. Save 1/2 cup of the pasta water for the pesto.
  4. Drain pasta and set aside.
  5. When spinach pesto is ready, mix it into noodles.
  6. Arrange spinach in the bottom of serving plates / bowls.
  7. Add pasta and top with 4 - 5 spears of asparagus.
  8. * garnish with crushed red pepper and vegan parmesean.

Pesto Sauce


  • 1/2 cup pasta water
  • 6 ounce fresh basil
  • 1 tablespoon garlic crushed
  • 1 teaspoon salt
  • 1/4 cup avocado oil
  • 1/2 cup pine nuts


  1. Blend all ingredients in a food processor until smooth.
