Mushrooms and Riced Cauliflower


  • 2 Tbl Earth Balance Margarine
  • 5 cloves garlic
  • 8 oz mushrooms sliced
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 1 pkg cauliflower riced


  1. In a saute pan, heat oil, saute garlic on medium for 2 min.
  2. Add mushrooms and cook until juices released.
  3. Mix in salt, nutmeg, and Cauliflower over medium heat for 2 min, stirring frequently.

Blackberry Salsa


  • 2 avocado diced
  • 1 lime juiced
  • 1/3 onion diced
  • 1/2 tsp salt
  • 1 tomato chopped
  • 6 oz blackberries


  1. In a separate bowl, mix together the salsa ingredients until thoroughly combined.
  2. Serve over Mushrooms and Riced Caulflower.
