  • 1 cup risotto
  • 1 Tbl olive oil
  • 1 Tbl Earth Balance Margarine
  • 1 pkg mushrooms chopped
  • 1/2 tsp nutmeg
  • 1 whole mango diced
  • 1/4 cup carrot shredded
  • 1 whole tomato
  • 1/3 cup cilantro chopped


  1. Prepare Risotto.
  2. In a separate pan, melted earth Balance and olive oil. Add mushrooms and cook until tender, stir in nutmeg
  3. Combine mushrooms to cooked Risotto. Stir in fresh veggies and mango.
