OK, this recipe may look a little advanced but it is actually quite simple. It has quite a few steps but the outcome is positively delicious.

To make the recipe Gluten-Free, try substituting Soyrizo or Tempeh in place of the Chorizo Seitan.

If you don’t have any Herbes de Provence on hand, you can substitute a mixture basil, oregano and thyme.

Oven-Baked Seasoned Cauliflowers

Ingredients

  • 1 head cauliflower broken into individual small flowers
  • 2 Tbl. olive oil
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. black pepper

Directions

  1. Clean and trim cauliflower and break into small bite-sized flowers.
  2. Place flowers in large plastic bag or bowl and top with olive oil, closing bag and shaking to coat.
  3. In a small bowl, mix together salt, garlic powder, onion powder and pepper and add to bag, shaking to distribute.
  4. Place seasoned cauliflower on foil-lined baking sheet and bake at 350 for 20 to 30 minutes or until fork-tender.

Cauliflower Never Tasted this Good Base

Ingredients

  • 16 oz. cauliflower rice
  • 1 tsp. Reduced Sodium vegetable bouillon
  • 1 Tbl. olive oil
  • 1/2 medium onion chopped
  • 1 cup mushrooms sliced
  • 8 oz. Upton's Naturals Chorizo Seitan, or other non-meat substitute
  • 1 large tomato chopped
  • 1/8 tsp. nutmeg
  • 1/2 tsp. black pepper
  • 1 Tbl. dried herbs de provence

Directions

  1. While flowers are cooking in oven, in a large pot, boil cauliflower rice in water and vegetable bullion until tender, about 20 minutes, strain.
  2. In a large saute pan heat olive oil and cook onion for 3 minutes, or until translucent.
  3. Add mushrooms and continue cooking for 5 minutes or until slightly browned.
  4. Add Chorizo Seitan and cook for an additional 5 minutes.
  5. Stir in tomato and seasoning and continue cooking for 2 minutes.

She's A Green Goddess Topping

Ingredients

  • 1 large avocado
  • 2 Tbl. tahini
  • 1 medium lime juiced
  • 2 Tbl. avocado oil
  • 2 Tbl. apple cider vinegar
  • 1/2 tsp. garlic powder
  • 3/4 tsp. dried oregano
  • 3/4 tsp. dried basil
  • 1 Tbl. low sodium tamari

Directions

  1. In a food processor, combine all ingredients and mix until smooth.
