There are so many new rice options available and the Lotus Foods organic varieties are delicious options. One of my favorites is the Organic Jade Pearl variety that is both organic and gluten-free. It pairs really well with vegetables and in this recipe, I used onions, asparagus, basil, and a tablespoon of capers.

You can experiment with different veggies, but I would suggest you try this one first!

Ingredients

  • 3 Tbl. olive oil
  • 1 Tbl. Earth Balance
  • 1 large onion diced
  • 15 stalks asparagus chopped into one-inch pieces, discarding ends
  • 2 cups Jade Pearl Rice, or regular variety
  • 1 Tbl. capers
  • 1 Tbl. basil leaves chopped
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 3 to 3 1/2 cups hot water
  • 1 Tbl. Better than Bouillon Vegetable flavored
  • 1/4 cup white wine, optional

Directions

  1. Heat olive oil and Earth Balance in a large saute pan and add onion. Cook until translucent. Add asparagus and continue cooking until the stalks become bright green and fork-tender.
  2. Add rice, capers, basil leaves, salt, black pepper, and hot water, 1 cup at a time. Be careful to not let the rice stick to the pan. Before adding additional cups of water, make sure the first water has evaporated.
  3. Stir in the Better Than Bouillon with the first cup of water. Add optional white wine when the rice is finished cooking.
