OMGoodness, these turned out amazing! What a great new twist to a traditional burrito wrap. The sauce really takes these to another level!




  • 16 oz. butternut squash cubed into 1" pieces
  • 1 large fennel bulb, diced. Reserve tops for another use.
  • 4 Tbl. olive oil
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. cumin
  • 1 tsp. Oregano


  1. Place butternut squash and diced fennel on a lined baking sheet. Top with olive oil and seasonings. Toss to coat. Bake in preheated 375-degree oven for 30 minutes.

Spectacular Sauce


  • 1 cup Vegenaise
  • 2 medium avocados
  • 2 Tbl. taco seasoning
  • 2 Tbl. Lime Juice


  1. Combine Vegenaise, avocados, taco seasoning, and lime juice in a food processor and combine until smooth.
  2. Spoon Spectacular Sauce on a soft tortilla shell and follow with filling. Top with diced tomatoes, optional, and wrap.
