This is so easy to make, is the perfect comfort food and doesn’t contain any nasty ingredients.

The vegetables I use are just a guide, you can add or subtract to your individual taste. I would not recommend substituting in the onion and the canned tomatoes, but everything else is fine.

Pasta! A staple in my household. I always have at least 6 packages on hand, both regular and gluten-free.

This Italian version of a traditionally French dish is loosely-based on a dinner my mom used to make when I was growing up.

You can also eliminate the Kite Hill Ricotta which makes it a little less decadent.

OK, this recipe may look a little advanced but it is actually quite simple. It has quite a few steps but the outcome is positively delicious.

To make the recipe Gluten-Free, try substituting Soyrizo or Tempeh in place of the Chorizo Seitan.

If you don’t have any Herbes de Provence on hand, you can substitute a mixture basil, oregano and thyme.
