This is so easy to make, is the perfect comfort food and doesn’t contain any nasty ingredients.

The vegetables I use are just a guide, you can add or subtract to your individual taste. I would not recommend substituting in the onion and the canned tomatoes, but everything else is fine.

Ingredients

  • 2 Tbl. olive oil
  • 1 large onion chopped
  • 2 stalks celery sliced
  • 2 medium carrots diced
  • 2 cups mushrooms chopped
  • 2 cups broccoli florets
  • 2 cups cauliflower bite-sized pieces
  • 2 medium zucchini, diced
  • 2 medium yellow squash diced
  • 3 medium roma tomatoes diced
  • 1 cup fingerling potatoes, chopped
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. black pepper
  • 1 Tbl. Oregano
  • 1 whole bay leaf
  • 1 tsp. Reduced Sodium Better Than Bullion
  • 28 oz. Crushed Tomatoes
  • 3 cups water or more if too thick

Directions

  1. Heat Olive Oil and saute all vegetables for 10 minutes, stirring often.
  2. Add tomatoes, water and seasonings and simmer, slightly covered, for 45 minutes, or until veggies are fork tender.

  1. So delicious! I was a little hesitant about the broccoli and cauliflower, but it turned out simply wonderfully! I did add more water than suggested because I wanted it to have more broth. My kids ate it up and went back for seconds and thirds! This was a perfect comfort soup on a cold Colorado day! Thanks Roxanne!!!
