Families with children can find plant-based dieting a bit of a challenge from the beginning. It definitely takes a bit more work and planning but the outcome is healthier, for them, and for the planet.

These bars are loosely based on ones I came across on OneGreenPlanet. I wasn’t quite happy with how they turned out so I made some adjustments and came up with my own version.

They are also a great source of nutrients with protein powder, peanut butter, almonds, and seeds. I used sesame seeds and raw, sliced almonds but next time I may try some sunflower seeds and/or nuts to add more bang per bite. If you are allergic to nuts but chopped peanuts are o.k., substitute them for the almonds.

Breakfast is supposedly the “most important meal of the day” which is why it should be both delicious and nutritious.  I mean, after all, your body has been waiting at least 10 hours to be fed again!

These vegan discs of deliciousness are also gluten-free and oil-free which makes them a healthier option for pancake-lovers.

You can also opt to top them with fresh fruit or powdered sugar. My personal favorite topping is peanut butter! Because everything is better with peanut butter!

Sometimes I just need to use up all the little half bags of ingredients stashed in my pantry.

This recipe turned out great and you can substitute to your heart’s content. Go ahead and throw in granola, raisins or even cereal. There really is no wrong way, as long as you keep the amounts shown in the recipe the same.

You can also make this recipe into cookies but with the So Cal temperature in the high 90’s today, a one-pan bar was my choice.
