Those of you that consistently follow my blog must think I have a scone addition. Truth is, I love them! I continually try to experiment with new ingredients. I f you try one of my scone recipes, please let it be this one.

This are fluffier than traditional scones plus have more of a cake texture. They are not at all dry and super easy to prepare.

Most scone recipes recommend that you form into a circle and then cut into pie-like pieces. But what the heck, just drop them on a baking sheet and you are good to go!

I am not a huge fan of dessert but these offer just the right amount of sweetness! They are fairly easy to make and because you put the entire batter into one baking sheet, cleanup is easy.

It took me quite a long time to find some good vegan butterscotch chips and I purchased mine here. They also have vegan white chocolate chips! AMAZING!

You can make these into cookies but the bars are so-much-easier! Also perfect during the hot summer months when you want to limit oven time.

Families with children can find a plant-based dieting a bit of a challenge from the beginning. It definitely takes a bit more work and planning but the outcome is healthier, for them and the planet.

These bars are loosely based on ones I came across on OneGreenPlanet. I wasn’t quite happy with how they turned out so I made some adjustments and came up with my own version.

They still have sugar but are also a great source of nutrients with the almonds and the seeds. I used sesame seeds and raw, sliced almonds but next time will probably add some sunflower seeds and/or nuts to add more bang per bite. If you are allergic to nuts but peanuts are o.k., substitute them for the almonds.

You can make an entire batch and individually wrap them and store in the freezer for up to 2 months.
