Vegan Smashed Red Potato Salad

I met up with my neighbor yesterday when he was walking his dog and asked what he was preparing for dinner. For a side dish he was making mashed potato salad. Hmmm? That got me thinking and experimenting and now, just in time for the last official holiday of summer, is a great side dish I created!

ENJOY!

Red Potatoes

Ingredients

  • 3 lbs. red potatoes Small, Whole
  • 10 cups water
  • 2 Tbl. salt

Directions

  1. Place red potatoes, with skin, in large saucepan with water. Bring to a boil. Add salt and cook over medium-high heat for 20 to 25 min., or until fork-tender. NOTE: Time will vary depending on size of potatoes.

Creamy Dressing

Ingredients

  • 1/2 cup red onion chopped
  • 1/2 cup celery chopped
  • 1 tsp. dill
  • 1/2 cup dill pickle relish
  • 2 Tbl. apple cider vinegar
  • 1 tsp. black pepper
  • 1 cup Hampton Creek Just Mayo

Directions

  1. Dice Red Onion and Celery and put in medium-sized bowl.
  2. Add Dill, Apple Cider Vinegar, Dill Pickle Relish, and black pepper
  3. Remove red potatoes from heat and drain. Return to pan and, using a potato masher, mash until broken down but not too mushy.
  4. Add Onion/Celery/Pickle Mixture and toss into mashed potatoes.
  5. Fold in Hampton Creek Just Mayo
