My late mother-in-law had a knack for many things in the kitchen and her two famous desserts were coconut layer cake and peach cobbler. My husband misses his mom so I decided to try and recreate this dessert especially for him. Now, if I can just figure out how to do the same with her gumbo!

Peaches are still in-season and this dessert is great served hot or cold.

Peachy-Keen Filling

Ingredients

  • 2/3 cup sugar
  • 2 Tbl. cornstarch
  • 1 1/2 cups orange juice
  • 4 cups peaches sliced
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 tsp. orange peel grated, OPTIONAL

Directions

  1. Whisk together sugar and cornstarch in saucepan until blended.
  2. Preheat oven to 350. Grease a 9 x 12" pan
  3. Place saucepan on medium heat and add orange juice to sugar and cornstarch . Heat, while continuing to whisk, just until blended.
  4. Stir in peaches and remaining ingredients (and optional orange peel) and cook, over medium heat until slightly thickened and peaches start to soften.

Not Your Average Buttermilk Topping

Ingredients

  • 1 cup Unsweetened almond milk
  • 1 Tbl. apple cider vinegar
  • 2 cups flour
  • 2 Tbl. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 6 Tbl. vegetable oil
  • 1 Tbl. sugar To sprinkle on topping before baking

Directions

  1. In a small bowl combine unsweetened almond milk and apple cider vinegar. Let sit for 5 minutes or until slightly curdled
  2. Whisk together flower, sugar, baking powder and baking soda.
  3. Mix in oil and buttermilk, just until mixed but still lumpy.
  4. Pour peach mixture into a prepared 9 x 12" glass pan.
  5. Top with large dollops of topping. Sprinkle with 1 Tbl. sugar and bake for 30 to 35 minutes or until topping has reached a golden brown.
