I created this recipe completely by accident as I overcooked my broccoli and decided to throw it in the food processor along with the cauliflower. I love the nutty and earthy taste plus the nutritional content is over the top!

This makes an excellent main course or side dish and is satisfying without any bread.

Cauliflower / Broccoli Mash

Ingredients

  • 12 oz broccoli florets
  • 1 head cauliflower
  • 4 tbsp Earth Balance Margarine melted
  • 1/4 cup almond milk

Directions

  1. Boil Broccoli and Cauliflower in salted water for at least 25 minutes or until tender.
  2. Drain Broccoli and Cauliflower, then beat with Earth Balance and almond milk, until smooth.

Bruschetta Topping

Ingredients

  • 5 roma tomatoes
  • 1/4 cup red onion
  • 1 tsp garlic crushed
  • 5 leaves fresh basil
  • 1 tsp salt
  • 2 tbsp olive oil

Directions

  1. Chop veggies and mix with the rest of the ingredients to combine.
  2. Chill until served.
