OK, please don’t laugh out loud when I tell you I was in the mood for chili when the Southern California temps dipped into the low 60’s!  Since I was born and raised in upstate New York you think I would be used to below zero temperatures and mounds of snow. Needless to say, I prefer palms to pines and sand to snow.

My husband cannot handle spices very well so this recipe is a mild version of chili but if you like a bit more heat, increase the chili powder from 1 tsp. to 1 Tbl. Also, this calls for 2 cups of water to make the chili more soup-like but if you prefer it super thick, decrease it to 1 cup.

I remember first experiencing Forbidden Rice about 10 years ago while on a business trip for to San Luis Obispo, California. I could not believe how good it tasted and have added this yummy and healthy organic rice variety to my shopping list.

Recently the company, Lotus Foods, introduced their Forbidden Rice Noodles and they are a wonderful addition to dishes that best are complemented with a nutty-tasting base.

Even though the weather in Southern California has been unseasonably HOT this week, I just pumped up the AC and came up with this comfort-food specialty!

I love oatmeal! Oats are a rich source of fiber and also contain calcium and potassium which can help reduce blood pressure. However, Oatmeal Raisin Cookies should not be considered a “health food” but they offer a much better nutritional profile than a chocolate chip cookie or piece of banana cream pie.

As with everything, try to limit your serving size and be conscious of the sugar content. I make a big batch, keep out a few cookies and freeze the rest. They are easy to defrost and make a great accompaniment for a cup of afternoon tea (since the origin of the Oatmeal cookie dates back to Great Britain), or to satisfy a late night sweet tooth!
