I came across a posting from Mercy For Animals for a Vegan Tuna Melt Sandwich. I wanted to give it a try but add some of the ingredients I love! Also, by substituting tomatoes for the bread it made it healthier and gluten-free.

This makes enough for 8 lunch-sized portions and 4 large dinner portions. It keeps in the refrigerator for a few days and is absolutely delicious. Next time I might add a little seaweed to the mix!

Ingredients

  • 2 stalks celery
  • 1/4 medium red onion
  • 1 can garbanzo beans Rinsed and Drained
  • 1 cup Sunflower Seeds
  • 2 Tbl. dill pickle relish
  • 8 Tbl. Vegan Mayonnaise
  • 1/4 tsp. black pepper
  • 1/4 tsp. tamari
  • 1/2 tsp. Old Bay Seasoning
  • 8 medium tomatoes fresh
  • 8 slices Follow Your Heart Vegan Cheese

Directions

  1. In a food processor, pulse Celery & Red Onion.
  2. Add Garbanzo Beans & Sunflower Seeds and pulse slightly, making sure to keep chunky.
  3. Pour mixture into a large bowl and mix in remaining ingredients, except tomatoes and cheese.
  4. Cut tomatoes into 6 to 8 pieces making sure not to cut through all the way in order to keep tomato intact.
  5. Brush lightly with olive oil and broil for 2 minutes.
  6. Remove from oven and stuff with a generous portion of Vegan Tuna and cover with a slice of vegan cheese.
  7. Place stuffed tomatoes back under broiler and cook 2 minutes or until bubbly.
