These tempting delights come together in a flash. From start to done they only require about 30 minutes, including cooking time!

My recommendation is to allow the dough (I used Trader Joe’s Pizza Dough) to sit, out of the bag, at room temperature for 15 minutes.

You can always add more veggies but in this case, the simpler, the better.

Ingredients

  • 32 oz. Trader Joe's Pizza Dough, 2 bags
  • 2 Tbl. flour for handling fresh dough

Directions

  1. Let pizza dough sit, outside of the bags, at room temperature for 10 to 15 minutes.
  2. Spread 1 Tbl. flour, for each ball of dough, on a counter or pastry mat.
  3. Coat balls with flour and roll or stretch into two ovals.

Vegan Basil Pesto

Ingredients

  • 1/3 cup pine nuts
  • 3 oz. basil fresh leaves
  • 1 1/2 tsp. garlic crushed
  • 1/4 cup olive oil
  • 1/4 cup @GoVeggie Vegan Parmesan

Directions

  1. Place Pine Nuts, Basil & Garlic into food processor and mix for about :30.
  2. With blade still running drizzle in olive oil and then add Go Veggie Vegan Parmesan.

Simply a Tomato or Two

Ingredients

  • 2 large roma tomatoes sliced

Directions

  1. Slice tomatoes into 1/4" pieces.

  1. Place 1/2 of the Vegan Basil Pesto in the center of each oval and top with tomato slices.
  2. Slightly fold in sides to seal the loaves and then bring together long pieces towards the middle, making sure the dough completely covers the Pesto and Tomatoes
  3. Place loaves on foil-lined baking sheets sprayed with olive oil.
  4. Drizzle with olive oil (if desired) and bake in preheated 425 degree oven for 15 minutes
