One of the many things I like best about Oatmeal Raisin cookies is that they are not super sweet. The raisins offer just the right amount of flavor to keep them somewhat savory and not overpowering.

You can substitute a mixture of applesauce and baking powder for the eggs in case you do not have any Follow Your Heart VeganEggs.

Ingredients

  • 3 Follow Your Heart Vegan Egg
  • 2 sticks Earth Balance Margarine
  • 1 cup brown sugar
  • 1 cup sugar
  • 3 cups white flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 2 cups oatmeal
  • 1 cup raisens
  • 1 teaspoon vanilla extract

Directions

  1. Prepare the vegan eggs according to package instructions, using 1/2 cup less of water.
  2. In a large bowl, cream margarine, brown sugar, and white sugar.
  3. Add remaining ingredients to bowl and mix well.
  4. Cover and let sit 25 min.
  5. Bake on prepared baking sheet at 350 for 10 to 12 min.
