Sometimes when the day has completely worn you down it calls for something “comforting” for dinner.

I created this recipe based on my mom’s famous chicken and gravy. This one, however, is cruelty-free and opts for riced cauliflower to save on carbs and calories.

Gravy Goodness

Ingredients

  • 3 tablespoons Earth Balance Margarine
  • 12 ounces Beyond Meat Chicken Strips
  • 1 teaspoon browning sauce
  • 1/2 onion chopped
  • 8 ounces cremini mushrooms
  • 2.5 cups water
  • 2 tablespoons vegetable bouillon
  • 6 tablespoons flour

Directions

  1. In a large skillet melt Earth Balance.
  2. Brown Better than chicken and add Browning sauce. Remove from pan.
  3. Add chopped onion to skillet and saute 3 min.
  4. Add chopped mushrooms and saute until juices are released (about 5 min).
  5. In a large measuring cup whisk 2 1/2 cups of hot water with Better than Bullion and flour.
  6. Mix into mushrooms and onions cook until thick.
  7. Remove from heat and add Beyond Chicken.
  8. Serve over prepared cauliflower rice and vegetable of choice.

Sauteed Squash

Ingredients

  • 1/5 tablespoon oil
  • 2 yellow squash sliced
  • 1 zuccinis sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Directions

  1. Sautee squash and zuccini in oil until tender.
  2. Add dried oregano and dried basil and cook until flavors combine.
  3. Heat oil in pan, saute garlic, add cauliflower and salt cook 2 to 3 min.

Cauliflower Rice

Ingredients

  • 2 tablespoons avocado oil
  • 1 teaspoon garlic crushed
  • 1 pound cauliflower riced
  • 1 teaspoon salt

Directions

  1. Heat oil in pan, saute garlic, add cauliflower and salt cook 2 to 3 min.
