OK, here’s the deal. One of my favorite cheat foods when I lived in Florida and worked for Walt Disney World was Bennigan’s Broccoli Bites. Thanks to my discovery of the amazing plant-based Cool Foods Vegi Bacon, I decided to recreate the decadent delights. In an attempt to keep them somewhat healthier, this version is not fried, however feel free to fry away.

You can use any kind of dipping sauce, just experiment with what you like. Or, simply buy a bottle of Follow Your Heart Reduced Fat Vegan Ranch Dressing.

I made these for dinner alongside dressed tomatoes but they are also great as an appetizer.

Ingredients

  • 15 oz. riced broccoli Trader Joes brand
  • 1/2 medium red onion chopped
  • 2 Tbl. flour
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 3 Tbl. Follow Your Heart Vegan Egg Prepared, according to package directions with 1/4 cup less water
  • 4 Tbl. Cool Foods Veggie Bacon
  • 7 oz. Parmela Creamery Aged Nut Cheese
  • 1/2 cup Italian Style Bread Crumbs

Directions

  1. In a large bowl, mix together Riced Broccoli, Red Onion, flour, garlic powder and salt.
  2. Mix in Vegan Egg and stir until evenly distributed.
  3. Stir in Vegi Bacon and Nut Cheese.
  4. Cover and refrigerate for 1 hour.
  5. Roll into balls using 2 Tbl. per ball. Press together to hold all ingredients in place.
  6. Place breadcrumbs in a pie dish and roll balls until coated on all sides.
  7. Place on foil-lined greased baking sheet and bake in 375 degree oven for 15 minutes.
  8. Recipe makes about 30 pieces, or 5 per person.
