Not quite sure where this idea came from today but it is certainly a keeper. I like the melding of flavors and textures.

You can serve on fresh greens, as pictured, or alone as a side dish.  I also topped mine with pine nuts but for those with nut allergies, they are definitely optional.

Oven Baked Butternut Squash

Ingredients

  • 32 oz. butternut squash chopped into 1" pieces
  • 3/4 cup water hot
  • 1 Tbl. Reduced Sodium, Better Than Bouillon

Directions

  1. Line a baking sheet with foil and spray with cooking spray.
  2. Lay out chopped Butternut Squash and top with water, mixed with melted Bouillon.
  3. Cover with aluminum foil and bake at 350 degrees for 45 minutes, or until fork-tender.
  4. Pour contents of baking sheet into large bowl and beat until smooth.

Seasoned Asparagus

Ingredients

  • 10 oz. asparagus ends trimmed & discarded and chop remaining stalks into 2" pieces
  • 1 Tbl. olive oil
  • 2 Tbl. tamari
  • 1 tsp. garlic powder

Directions

  1. When Butternut Squash is cooking, trim and chop asparagus. Place into a large plastic bag and mix with Olive Oil, Tamari and Garlic Powder. Set aside for 10 minutes.
  2. Heat a pan, sprayed with cooking spray until hot. Add Asparagus and cook for 5 minutes on medium-high heat.

Herbed Brown "Butter" Sauce

Ingredients

  • 4 Tbl. Earth Balance Margarine
  • 1 Tbl. Chives, chopped
  • 2 Tbl. basil chopped

Directions

  1. Brown, being careful not to burn, Earth Balance. Remove from heat and stir in Chives and Basil
  2. Plate on top of fresh greens and top with optional pine nuts.
