Broccoli is one of the best vegetables! It is a great source of Vitamin C which is vital during cold and flu season.

I make this dish year-round and include some apple cider vinegar to help boost health benefits.



  • 2 large Celery Stalks
  • 1 small Apple, skin on, core removed
  • 1 small Green Bell Pepper,
  • 18 oz. Broccoli Slaw
  • 2 Tbl. apple cider vinegar
  • 4 Tbl. Dill Relish
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup Hampton Creek Just Mayo or vegan Mayo of choice


  1. In a food processor, pulse celery, apple and bell pepper until chopped but not mushy.
  2. Put mixture in large bowl and set aside.
  3. Chop Broccoli Slaw in food processor, in batches of 3, so it doesn't get too mushy. Add to bowl with celery, apple and bell pepper.
  4. Stir in remaining ingredients and serve with tomato and lettuce as a main dish or side.
  5. Top with fresh black pepper.
