YUM! I love me some potatoes, anyway possible except in hash brown patties or tater tots!

It’s raining today in Southern California which equates to another one of my 101 reasons to declare it a soup day!

This soup comes together quickly and since potatoes are a relatively bland vegetable, you can use your imagination and add your own toppings.

In addition to the Tofurky and Parmela Creamery shreds I used extra Parmela Creamery shreds, chopped red onion and a dash of Sriracha!

Quick, economical and DELICIOUS!

The Souper Soup!

Ingredients

  • 2 1/2 lbs. red potatoes or fingerling, peeled and diced
  • 1 Tbl. olive oil
  • 1 large shallot diced
  • 5-6 cups water to desired consistency
  • 1 Tbl. Reduced Sodium, Better Than Bouillon
  • 1/2 tsp. black pepper
  • 1 tsp. dill

Directions

  1. Clean and cut into 2" pieces red or fingerling potatoes.
  2. In a large saucepan heat oil and add shallot and potatoes.
  3. Cook over medium-high heat for 5 minutes, stirring often.
  4. Pour in water, bouillon, pepper and dill. (If desired, substitute 1 cup of non-dairy unsweetened milk for the water.)
  5. Cover and cook for 60 minutes or until potatoes are fork-tender.
  6. Cream potato soup mixture using an immersion blender.

Toppings Please!

Ingredients

  • 2 links Tofurky Italian Sausage
  • 2 oz. Parmela Creamery Sharp Cheddar Style Cheese

Directions

  1. In a saute pan, heat 2 links of Tofurky Italian Sausage and drain on paper towels.
  2. Add to soup along with Parmela Creamery and any other toppings of choice.
