You will most likely see a lot of posts on this site that include cauliflower which, in my opinion, is one of the most versatile foods on the planet.

You can serve this recipe both hot or cold but I prefer the hot version because it slightly wilts the spinach leaves.

Light Baking Batter Mix

Ingredients

  • 1/4 onion
  • 3/4 cup fresh cilantro
  • 5 leaves basil
  • 1 teaspoon salt
  • 1 teaspoon Herbs de Provence
  • 1 lime juiced
  • 1/4 cup tahini

Directions

  1. In a food processor combine onion, cilantro, basil leaves, salt, Herbs de Provence, lime juice and tahini.

Herbed Cauliflower

Ingredients

  • 1 head cauliflower sliced
  • 1 tablespoon Better Than Bullion Garlic Flavor
  • 1 tablespoon capers
  • 2 cups fresh spinach
  • 1 tomato chopped
  • 1.4 cup pine nuts
  • 1/2 lime juiced

Directions

  1. In a large pot place cauliflower, green leaves removed, stem side up in pan of water.
  2. Add @BetterThanBullion garlic flavor and boil for 15 min.
  3. Cover with Light Baking Batter Mix and top with capers.
  4. Bake, uncovered at 375° For 15 min.
  5. On a plate, place some fresh spinach, chopped tomatoes and a few pine nuts. Top with lime juice, salt and pepper.
  6. Place a slice of the cauliflower.
