It is a cold day here in Southern California, a brisk 60 degrees! Time for soup. But, to be perfectly honest, every day is a great day for soup.

This comes together rather quickly 1 hour, tops, including cook time. Use your imagination for whatever you want to use as toppings….vegan sour cream, avocado, tortilla strips, fresh cilantro, or all of the above!

An extra added taste is a squeeze of fresh lime juice. YUM!

Ingredients

  • 2 Tbl. olive oil
  • 1 Small onion Diced
  • 1 Small shallot Diced
  • 1 Tbl. garlic Crushed
  • 2/3 Cup cilantro Roughly Chopped - Leaves Only
  • 1/4 Cup Banana Pepper, Seeds Removed and Diced (can substitute Jalapeno)
  • 6 Cups water
  • 2 Tbl. Vegetable Better than Bouillon
  • 4 Tbl. flour
  • 1 Tsp. Oregano
  • 2 Tsp. cumin
  • 1 Tsp. Corriander
  • 1/8 Tsp. nutmeg
  • 28 oz. Fire Roasted Crushed Tomatoes
  • 2 medium tomatoes Fresh, Chopped

Directions

  1. Heat Olive Oil in Saucepan.
  2. Add Onion, Shallot, Garlic, Cilantro, Banana Pepper and saute for 3 minutes, stirring often.
  3. Whisk 4 Tbl. Flour into 2 cups of the water. Add to vegetable mixture in pan. Cook for 3 minutes, or until slightly thickened.
  4. Mix 2 Tbl. Vegetable Better than Bouillon in 4 cups of water. Add to pan.
  5. Add Seasonings, Canned and Fresh Tomatoes.
  6. Bring to a boil and then simmer, over medium-low heat, for 35 minutes.
  7. Serve with choice of toppings.
